Almond Cookies
100 gram all purpose flour
500 gram almond flour
2tsp Vanilla extract
300g unsalted butter (room temperature)
3 large egg yolks
1 dash of salt
200g powdered sugar
1 teaspoon almond extract
1 teaspoon vanilla extract
1 egg yolk n 1 teaspoon water for egg wash
Sift flour, powdered sugar and almond flour. Discard lumps.
Add butter to dry ingredients and combine with hands until the dough resembles crumbly sand.
Briefly stir vanilla extract, almond extract and egg together than pour into dough. Combine with hands.
Allow to cool in fridge for 2 hour.
After an hour, roll out dough and cut with cookie cutters. Brush the cookie dough with beaten egg wash.
Bake at 350 degrees for 20 minutes
