1 1/2 cups all purpose flour
2 tablespoons cornstarch
1 cup corn kernels (thawed if frozen)
500 grams Silverfish (thawed if frozen)
2 large eggs
Salt and pepper to taste
5 green unions, chopped
Canola oil for frying
Stir in silver fish, green onions and corn kernels. Season with salt and pepper. Add egg, cornstarch and flour. Stir until well combined.
Meanwhile, heat oil in a frying pan.
Drop about 1 tablespoon of batter to the oil adding 6 to 8 small scoops of batter at a time. Fry until golden brown on both sides, about 4 minutes.
