3 1/2 oz dark chocolate, finely chopped
3 tablespoons instant coffee
1 cup boiling water 1/2 hot milk
1/2 cup unsweetened cocoa powder
1 teaspoon vanilla extract
1 cup unsalted butter, softened and chopped plus extra for greasing
1 cup plus 6 tablespoon raw sugar
1 cup dark brown sugar
4 cups self rising flour
4 large eggs, lightly beaten
Preheat the oven to 350F, lightly grease a 6 inch round pan cake pan.
place the chocolate and coffee in a heatproof bowl and pour over boiling water. stir gently until me;ted and smooth and let stand until cool.
Meanwhile, place the hot milk, cocoa powder and vanilla in a bowl and whisk to combine well the set aside to cool.
Using an electric mixer, beat the butter and sugars until light and fluffy. with the motor on low speed, add the flour, the beaten egg, and beat until just combine. Add the chocolate and milk mixture in alternate batches and beat until well combined. the batter should resemble a coffee-colored and frosting
Spoon the batter into prepared pan and bake for 35-40 minutes or until s skewer insert into the center of the cake comes out clean. Let the cake stand in the pan for 10 minutes, then turn out and transfer to a wire rack.
